Baking time with my kiddos!

Happy Saturday! What a long and hectic week it was. Between work, and my children’s crazy schedule’s, this mama is DRAINED. I needed today to relax and spend time with my kids. It’s always nice to take some time and spend it at home just to chill out , and not run around for once.

I already tackled the dishwasher, did two loads of laundry, got the kids dressed and their beds stripped. We even had some special time this morning to bake these absolutely easy and delicious cookies! I bought a package of Pillsbury heart cut out shape cookies!

All we had to do was bake them on parchment paper in the oven set to 350 degrees for 10 minutes. Once the baking process was done I let them completely cool before letting my son help decorate them!

There was no big mess to cleanup, and no hassle to use cookie cutters and roll dough. I highly recommend these cookies! The kids had fun eating them (as did I…)

Baked Eggplant Parm!

This yummy and creamy eggplant is sure to make everyone in the mood for some Italian! Keep scrolling to find out how to make this delicious entree!

First step: Preheat your oven to 425 degrees Fahrenheit

Let’s get to our main ingredients:

You’ll need…

-One eggplant (this will serve up to 5 people)

-Your favorite red sauce (1 jar)

-Half container of ricotta cheese (equal to 7.5 ounces)

-1/4 cup of parmesan cheese

-1 cup of mozzarella cheese

1/4 cup of Panko crumbs

Cut up your eggplant into 1 inch thick pieces and set onto a pan lined with parchment paper.

Now it’s time to brown the eggplant! Once oven is preheated to 425 degrees, put the eggplant in the oven for 25 minutes. Make sure to flip each piece of eggplant over half way through to ensure an even brown.

-Take your eggplant out to cool.

Now its time to mix together the ricotta cheese and parmesan cheese.

Once mixed, set aside, and line a baking pan with tin foil. Next step is too add sauce to the bottom of the pan, just a thin layer!

You can now add all of the eggplant to the pan.

Bring back the ricotta cheese mixture, and generously add a spoonful to the top of each piece of eggplant, and lightly spread on top.

Now you’re going to drizzle some more sauce on, followed by the mozzarella cheese, and panko crumbs. You can add some more parmesan cheese to the top before putting it into the oven for 25-30 minutes.


Yummy Buffalo Chicken Ring

Looking for a yummy crowd pleasing snack for your guests? Look no further! I will teach you how to make this delicious snack in just a few easy steps!!

First lets talk ingredients!

You’ll need:

One rotisserie chicken

1 cup of mozzarella cheese

1/2 a package of cream cheese (equal to 4 oz)

1/4 cup of chopped celery

1/4 cup of hot sauce

3 tbsp of melted butter

2 cans of crescent rolls

Crushed red pepper (optional)

Now lets get this show on the road!

-Preheat your oven to 350 degrees F

-Make sure you pull all of your chicken off the bone and set it into a large mixing bowl

-Shred the chicken using a mixer and set aside

-Add the cream cheese to a medium mixing bowl and beat with the mixer for two minutes or until smooth

-Use a rubber spatula and scoop all of the cream cheese onto your shredded chicken

-Add your celery, cheese, and sauce to the chicken

-Mix well with a fork

-Lay out the crescent rolls onto a large greased pan slightly overlapping each other

-Scoop the mixture and place evenly throughout the ring

-Pull each triangle point to the center of the pan

-Using a pastry brush, spread the melted butter onto the top of the ring

-Sprinkle crushed red pepper on top (optional)

*Bake for 25 minutes or until golden brown*

Super easy and Professional looking photo shoot!

If you have kids like me, then I’m sure you have probably experienced the dreaded days of taking the kids to get professional pictures done. Not only can they get super expensive but kids will be kids and will choose not to cooperate which may result in meltdowns and chaos! Now I’m not saying to 100% boycott that, but there are other ways to get some awesome shoots done CHEAP and in the comfort of your own home!

This photo was shot in my kitchen with my daughter Rylee! I used my ring light and my Canon Power shot sx530 hs in manual mode. Our “Hello Darling” plaque was bought at Target in their dollar section, and I spent $3 on it!

It doesn’t take much money to capture some great eye catching pics! Here’s a few tips to keep in mind when you want to snap some awesome shots!

TIP 1:

If you own a camera always take the pics with that versus a phone. You’ll get much more clean and clearer images when it’s time to edit and view them. I promise you’ll see such a difference! Below are two photos. The first was taken with my iPhone, while the second I snapped with my camera. “Both photos are unedited”

PHOTO TIP: We used a faux fur Christmas tree shirt for the backdrop!

TIP 2:

If you love taking staged photos of your kiddos or enjoy taking pics as a hobby I highly recommend that you invest in a Ring Light! I bought one on Amazon for around $100 and I love it! What the ring light does is it provides uniform light coming direct from your camera’s point of view, while helping to eliminate any unwanted shadows. So basically it makes your pictures look so much better!!

TIP 3:

Take lots of shots! While they may look good to you while snapping, they could appear different once you get the image up and ready to edit, so take lots of shots so that you have more material to choose from!

TIP 4:

Get Creative! I buy a majority of my props from craft stores, the dollar store and target! This gives pictures an eye appealing look and makes them more fun to create!

For this photo we bought some cupcakes from our local grocery store and I bought this cute cupcake stand from target for $3!

TIP 5:

SHARE your work with others and post on social media! You never know who may come across your work and they could offer great opportunities and advice, PLUS you can also share some inspiration through your work with others!



Cherishing these moments.

It’s been quite the usual hectic Saturday. All my little ones are home with me while my husband works, and the day is full of lots of energy, tantrums, hugs, laughter, and exhaustion. I read and hear every where to enjoy these crazy moments while they’re here because they don’t last forever. And it’s true. Although some days I feel like I’m at my breaking point, I feel burnt out and unwanted, I feel taken for granted and exhausted, I know that I have the best thing on the planet, and that’s being given the chance to be my children’s mother. They are the best thing to have ever happened to me. They all have their own quirky attitudes and different personalities and all four of them complete me.

I enjoyed my hugs from Kolton, and my smiles from Julian. I loved hearing today from Cameron that I looked beautiful and that he likes me, and I loved seeing Rylee’s eyes light up when she saw me walk into a room. In those moments I feel wanted and it’s the best feeling in the world.

Being a mom is the most rewarding thing in the world, it has it’s tough days but at the end of it all I’m glad I’m a mom, and I’m happy to have four little mini’s to love me.

Tonight, after the boys fell asleep I got to spend some quality time with my Rylee girl. The sweetest baby ever. I had prayed and prayed for a baby girl, and when I got the phone call last December that I was expecting a female my heart dropped. I cried, I laughed, I wanted to scream FINALLY! I had pictured having a girl forever, and after 3 pregnancies with boys I never thought I’d ever have a daughter. She’s my best friend and I hope I can have the strong relationship with her that I have with my mom!

Holy mess.

Do you often find your house looking like a tornado just hit? Same. If only there were an easier and quicker way for clean up, and storage. Not to worry!
Head to your local walmart and pick up some canvas baskets. For little ones like the ones pictured below, they cost about $4 a piece.
Use them as a place to neatly store toys. Out of sight out of mind.

Now the kids have access to whatever toys they want to play with, and you get to keep everything neatly stored, even if it’s only at night while the kids sleep 🙂
